So I did a bit of reading as well as played a couple of games and I have come to the following conclusion:
Firstly, and most obviously, he is invisible, so that makes it quite a lot harder to hit him with any kind of attack, especially abilities like Sleeping Dart.
Secondly, he is outside the map while ulting, meaning he is quite literally invulnerable as projectiles can’t actually travel there. I have found no conclusive proof of this, but considering many other people claim it (without ever citing sources), and the fact that I never managed to damage Doomfist in his ult no matter how hard I tried and what I threw at him (even tried Pharah ult once), I believe this to be true.
However, I would not guarantee that it stays this way: Blizzard will possibly change him/his mechanics in the near future, but currently this seems to be the state of affairs.
